There are many techniques for approximating unknown distributions. This talk approaches the problem from the point of exponential models, particularly from the Maximum Entropy point of view. The basics and some issues involved in using it are presented. Then some applications of it (includig the speaker's [he, he, that's me] summer experience) are described and a new use for Maximum Entropy is tried: how can it help a bunch of people digest their pizza...
